Prepare

Polenta Cake

1. Heat the non-stick pan on medium flame for 30 seconds using a medium-sized burner

2. Pour half of the olive oil into the pan and heat on medium flame for about 20 seconds

3. Sear polenta cake till golden brown. Flip and repeat the process

4. Transfer to a quarter plate. Wipe the pan

Vegetables

1. Heat the pan on medium flame for about 1 minute

2. Pour the remaining olive oil into the pan and heat on medium flame for about 30 seconds

3. Add half of garlic & sauté till light brown. Add onions, leek & celery mix. Sauté till golden brown

4. Add mix vegetables. Sauté for 2-3 minutes

5. Add red wine and 1 full measure of water (using measure provided). Cook for about 2 minutes

6. Add tomato sauce, rosemary, half of salt & pepper. Cook till the sauce thickens. Reduce the flame to medium-slow

7. Add half the butter and cooking cream. Simmer for 5-7 minutes till all the ingredients blend well. Transfer to a quarter plate

Belfort Pasta

1. Heat the non-stick pan on high flame for 30 seconds using a medium-sized burner

2. Pour extra virgin olive oil into the pan and heat for about 20 seconds

3. Add the remaining garlic and chilli flakes. Reduce flame to medium-slow. Sauté till light golden brown

4. Add 1 full measure of water (using measure provided) and heat for about 30 seconds

5. Add the remaining butter and spaghetti. Mix and toss well till the water and butter blend together

6. Add the remaining salt and parsley. Toss well

Plate

1. Place the grilled polenta in the center of the serving platter

2. Serve the sautéed vegetables and Belfort spaghetti on either side of polenta

3. Garnish Belfort spaghetti with parsley & parmesan cheese
