Prepare

Couscous

1. Heat the non-stick pan on medium flame for 30 seconds using a medium-sized burner

2. Pour half of the olive oil into the pan and heat on medium flame for about 20 seconds

3. Add half of garlic & sauté till light brown. Add 1/3rd of the onions and half of the leek & celery mix. Sauté till golden brown

4. Add vegetable mix for couscous . Sauté for 2-3 minutes till all the ingredients mix well

5. Add couscous and stir for 1 minute

6. Add 1 full measure of water (using measure provided), half of the salt or to taste & white pepper

7. Simmer for about 2-3 minutes till the water gets absorbed & all the ingredients blend well. Transfer to a small bowl

Vegetable Stew

1. Heat the pan on medium flame for about 1 minute

2. Pour remaining olive oil into the pan and heat on medium flame for about 30 seconds

3. Add the remaining garlic & sauté till light brown. Add the remaining onions, leek & celery mix. Sauté till golden brown

4. Add vegetable mix for stew. Sauté for 2-3 minutes

5. Add red wine and 1 full measure of water (using measure provided). Cook for about 2 minutes

6. Add tomato sauce, rosemary, the remaining salt & pepper. Reduce the flame to medium-slow

7. Add butter and cooking cream when the tomato sauce thickens. Simmer for 5-7 minutes till all the ingredients blend well. Transfer to a quarter plate

Plate

1. Turn the couscous bowl upside down on the serving platter on one side of the platter. Remove the bowl

2. Place the vegetable stew on the side of couscous
